5 Perfect Puddings For The Barbecue This Summer

The Olympics may be over but the summer isn’t – and to celebrate here’s our list of the top 5 puddings you should serve at barbecues in the coming weeks.

Pudding is easy to overlook when it comes to al fresco cooking, but a sweet treat at the end of a barbecue can make all the difference and really round off a meal. So now’s the time to think ahead of your next BBQ party and get those ideas flowing for desserts – to get you started, here are some of our favourite barbecue puddings.

 

1. Barbecued banana

This classic always goes down well thanks to its simplicity and versatility. You can truly make this dish your own by adding your preferred sauce or side accompaniment, but we favour the following version.

With the bananas still in their skins, carefully slice along one side of the fruit taking care not to pierce through to the other side. Then add a few pieces of chocolate into the opening and wrap in foil. Barbecue the bananas for around 15 minutes.

When ready, remove from the barbecue and serve in their skins with a dollop of freshly whipped cream. And if you’re feeling decadent, add a splash of Baileys and enjoy!

2. Grilled peaches with blueberries

Fruity and packed full of natural sweetness, this pudding is a must. Halve the ripe peaches and place on some foil, cut-side up. Fill each half with blueberries and add a few extra if you want to, then sprinkle the fruit with a teaspoon of brown sugar and good squeeze of lemon juice. Wrap the foil over the top of the peach halves and place on the grill for 15-20 minutes. Serve with a scoop of vanilla ice cream.

 

3. BBQ baked apples

A twist on the traditional dessert, this is made in a similar way to how it is when baked in the oven. Remove the cores from the apples and place the fruit on some foil. Then fill the empty cores with raisons and sprinkle some cinnamon on top. Wrap the foil around the apples and place on the barbecue for 20-25 minutes. Serve with cream, yogurt or ice cream depending on what you prefer.

 

4. Barbecued sweet kebabs

You can choose whether to make this pudding purely healthy or to add a taste of sugary goodness in the shape of marshmallows. For the fruit-only version, thread chunks of apple, pineapple, mango, grape, strawberry, and banana onto a skewer. Brush with some orange juice and sprinkle lightly with cinnamon, then barbecue on each side for a couple of minutes and serve on its own or with some ice cream.

For added sweetness, thread a marshmallow in between the fruit chunks, and serve with ice cream and some chocolate sauce. Yummy!

Use a charcoal barbecue for a sublime taste.

 

5. Strawberry delight

This is the easiest of all the puddings but perfect for every barbecue. All you need to do is fill a big bowl with fresh strawberries and another with melted chocolate or single cream – and let your guests dig in! Strawberries dipped in chocolate or cream are delicious, and people can keep coming back for more throughout the afternoon or evening.
