Winter Spicy Barbecue Sauce Recipes
No barbecue is complete without an array of barbecue sauces, be they sharp, sweet, spicy or cheesy. Winter barbecues are a wonderful way of eating alfresco with friends, keeping warm by the glow of the BBQ and enjoying hearty food – topped off with a warming spicy sauce.
To add a touch of spice to your winter barbecue, why not try one or more of the following recipes.
Rum and chilli BBQ sauce
Just the thought of this sauce keeps the cool air at bay! This sauce really has a kick and is perfect for marinating meat or fish, or simply as a dipping or side sauce.
To have enough sauce for 6 people, you’ll need:
- 2 tablespoons chilli sauce (personal preference on how hot the sauce is!)
- 2 tablespoons rum
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 115g brown sugar
- 1 garlic clove
- Half a teaspoon mustard powder
Once you’ve peeled the garlic clove and crushed it, add it to a pan. Mix in the remaining ingredients, stirring well as you do so, and simmer over the heat for half an hour. Add black paper and seasoning according to your requirements. Let the sauce cool before serving.
Red wine and chilli BBQ sauce
Who can resist the rich, deep flavours of this hearty BBQ sauce, perfect for winter nights?
For plenty of sauce for your party of 6, you’ll need:
- 500ml red wine
- 2 tablespoons chilli powder
- 2 tablespoons red wine vinegar
- 1 red chilli
- 1 tablespoon paprika
- 350ml ketchup
- 150ml water
- 2 tablespoons oil
- 2 shallots
- 2 garlic cloves
- 1 tablespoon mustard
- 1 tablespoon Worcestershire sauce
- 3 tablespoons brown sugar
Finely chop the shallots, garlic and chilli before adding to a pan of warmed oil and heating for about 5 minutes. Next add the wine and turn up the heat until only a third of the volume remains (roughly 125ml), then add the rest of the ingredients and stir together. Heat at a slightly lower temperature for 20 minutes, stirring throughout, until the sauce thickens. Remove from the heat and allow to cool completely before deciding how to jazz up your barbecue with this sauce.
Classic spicy BBQ sauce
This warming sauce is bound to be a welcome addition to any barbecue and is so simple to make.
Ingredients needed for 6+ people:
- 4 garlic cloves
- 2 red chillies
- 1 tablespoon olive oil
- 1 tablespoon cumin
- 300ml water
- 450ml ketchup
- 1 tablespoon brown sugar
- Salt, pepper and dried thyme leaves to garnish
Chop and de-seed the chillies, taking care to wash your hands thoroughly afterwards and to avoid touching your eyes until your hands are clean. Take the garlic cloves and cut chillies and finely slice these into small segments. Add the oil to a pan, followed by the garlic, chilli and sprinkling of thyme and cumin, stirring for about half a minute. Then add the ketchup, water, sugar and salt and pepper, and cook on high for 5 minutes before turning the heat down and letting it simmer for a further 20 minutes. Stir throughout, and let it cool before serving or using as a marinade.
