Barbecue Spicy Chicken Ciabattas Recipe

This tasty recipe makes a refreshing change from a traditional burger and is filling enough to be served as a main with a salad.

Ingredients:

  • 4 skinless chicken breasts
  • 1 ciabatta loaf
  • 1 clove garlic crushed
  • Romaine lettuce
  • Juice of 1 lemon
  • 1 tbspn smoked paprika
  • Dash of olive oil
  • 4 tbspn mayonnaise

Method:

With a very sharp knife, slice the chicken breasts in half horizontally and then lay them between sheets of Clingfilm. Now take a rolling pin and whack the chicken until it is around 1cm thick.

Drizzle each piece of chicken with lemon juice, dust with paprika and then add salt and pepper to taste. Drizzle each with a little olive oil and place on hot barbeque grill. Cook for 4-5 minutes on each side or until you are satisfied.

Half ciabatta horizontally and lay on hot grill for one minute. Now mix crushed garlic and mayonnaise and spread each slice of ciabatta with the mixture. Add a lettuce leaf and a slice of the chicken for each. Cut in half and serve with more salad.

Tips:

For precise cooking use a gas barbecue as they allow you ultimate control over temperature.
