Barbecue Spicy Thai Drumstick Recipe
A taste of the Orient is simple to achieve with the help of some Thai red curry paste!
- 8 chicken drumsticks
- Thai red curry paste (tbspn)
- 2 garlic cloves crushed
- Sweet chilli sauce (2 tbspn)
- Grated zest of 1 orange plus 2 tbspn juice
Start your barbeque off and Preheat your oven to 200C/180C fan/gas 6 and line a tray with foil. In a bowl, mix all the ingredients apart from the chicken. Slash the meat of the chicken drumsticks to aid absorption of the marinade. Toss the drumsticks well in the bowl of marinade and then lay them on the foil-covered tray.
Tip the remaining marinade all over the chicken drumsticks and cook for 25 minutes. Now transfer the drumsticks to the barbecue grill and cook for a further 10 minutes. Serve with green salad and rice.
